Fries and Pancakes

So Thursday was a pretty easy cooking day but oh so yummy. Basically I just made 2 hamburgers with a half a pound of ground beef. I had 90/10 so there wasn’t much shrinkage. I put onion and chili powder in these but you could really do anything. I also made some sweet potato fries! They were so good. I would have preferred them a little crisper but I was ready to eat. I had my Poppie peel the potato cause well I have horrible peeling skills.  Then I used my slicer with the quarter inch divider blades, coated them with melted coconut oil, sprinkled salt, pepper and paprika. Then I cooked them for about 30 mins at 350 in a foil lined pan.

The difference between mine and them is mine weren’t as fluffy and I think its cause I used Almond Flour instead of Coconut Flour. Me and my need to never follow recipes. They tasted good though not great but okay. And on the upside the dog liked them and ate two!!

I decide!

I’m back! Well technically been here the whole time just haven’t written. So get ready for a book and a half!

Saturday AKA Prep Day!

First thing I did was cook my roast. Now meat can sometimes be expensive if you aren’t careful and I undoubtedly spent close to 18 dollars on this thing but I got 3 meals out of it! So to begin with I put some sliced carrots, some leftover white onion that was already chopped, a little green onion, some whole garlic and some grated ginger in the crock pot. Then I put my slab of meat on top.

I covered it and cooked it for like 8 hrs on low. You can do less I just didn’t need it that soon and it was smothered in juices.

I also made a cabbage salad called Bert’s Salad. I’ll post the recipe later. I made a few modifications (omitted the ramen noodles and sesame seeds (replaced butter with ghee, soy sauce with coconut aminos and sugar with dark brown sugar) It was beyond yummy!

I was super hungry so before I did anything else I ate. I also ate this for dinner on Sunday.

Next thing I made was my wonderful muffins and bacon for breakfast. I ran out of pecan so I just made them without. They are still pretty good but the pecans make them so much better.

I also made my tortilla strips but got smart this time. I knew the dough was gonna be really sticky so I coated my hands in olive oil and then flattened it as much as possible. Once that was done just cut pieces and fried again. They were a little thick this time but still yummy!

Sunday! Yet another Birthday Party!

So I went to my Nephews party on Sunday and was planning on eating the food my best friend had made. We had talked earlier in the week about it and she said she was going to make pulled pork sandwiches. So I figured great I will just eat the meat and all will be good. Well when I got there she said they had changed their mind and was sending her husband to get pizza. So I decided instead of eating horrible pizza or starving to death I’d give him money to get me wings. So I had mild wings for lunch. Probably/most likely not paleo prepared but better than pizza or starvation. And yes that is horrible processed ranch dressing. Give me a break the wings were hot to me and I didn’t really use that much.

I also had a cupcake. Yes a non-paleo full of grain and dairy cupcake. I think one of the biggest things about this change has been the fact that I make conscious decisions about everything that goes in my mouth and most the time advanced decisions. I knew I was going to birthday party and I decided early in the week that I would allow myself one small piece of cake or a cupcake. So that’s what I did people and I didn’t feel one ounce bad about it!

Monday

I had the day off Monday but I felt horrible and actually got sick so I took it easy and lightly munched on stuff I had around the house. The main issue is that when I normally feel that way I go straight for bread or crackers. This time I didn’t and I was proud of myself! This did make lunch on Tuesday a tad different but I gathered a few things and was good to go.

Tuesday

A much better day and taco Tuesday. I told you I would use that roast for 3 meals but have only explained 2. So this is the 3rd. I took the leftover meat and put it in my food chopper until relatively small. I then heated it in a pan and added water about a cup and a half it soaked it up easy and some seasonings. I only chopped a carrot and half a not so ripe avocado and added it with my already prepared tortilla strips.

It was really good the next day for lunch, with guacamole and plantain chips (which yes I know not the best but easy).

Wednesday

Yesterday I made the pecan crusted chicken and garlic mashed sweet potatoes that I’ve made before. The trick to the sweet potatoes was roasted garlic. If you’ve never roasted garlic you are missing heavenly goodness! All I did was grab some garlic cloves, wrap them in foil and stuff them in the oven at 350 until I was ready to put my chicken in. Also I cut my chicken into small strip like nuggets this time. And my Poppie wanted something spicy so I put wing sauce on a few for him.

That doesn’t look Paleo!

So someone mentioned to me that my food doesn’t look paleo. At first I was like “what the crap does that mean?” Then I realized its because my food looks good and otherwise normal. The thing is, I knew that I would not survive doing paleo if I couldn’t have some of my favorite things or stick to the convenience I already had on a daily basis. So what am I doing? I’m making things that are similar to what I would have normally ate but with paleo ingredients and at the same time I’m trying new things and expanding my pallet. And as I have mentioned previously what’s paleo for me, may not be paleo for you. With that I’d like to mention that yesterday I had an awesome revelation. I have not had my regular food babies (extreme bloating after eating that makes you look a few months pregnant, in my case about 5 months!) as I call them. Its amazing and it lets me know that paleo really is working for me.

More good news: Wednesday was a much better food day!

I took my chicken out of the freezer the night before, the one that had marinade already in it. When I was ready to cook I cut the chicken into strips and put it in a warm pan. Don’t throw that marinade away though it will become useful later! I browned each side then turned the pot down a little, poured in the saved marinade and then cover. Let it cook.

While that was cooking I made some sweet potato coins. I used my handy dandy slicer and cut nice round slices. I put an egg in one bowl and a almond flour and spice mix in another. I used garlic powder, onion powder and something else that I can’t remember. Anyway, once cut I put some ghee in a pan, tossed the sweet potato in the egg, then flour mixture and fried.

Once it was all done I kinda felt like I’d died and gone to heaven!

Thursday was a rough day. For one I had eaten a rotten muffin the day before. I realized something was wrong in my last bite. So Wednesday I made some more of the pecan molasses ones I had done before. I liked them better anyway, but because I had eaten a not so good muffin I was in the potty a lot on Thursday and my tummy hurt. Good thing I had a pretty simple mean planned. It was really simple and tasted really good but had some spice to it. Problem was in the middle of cooking my soup I had a major disaster. I seeded my jalapeno, put it in the soup and continued working. Do you see the problem here? I DID NOT WASH MY HANDS!!! At some point my eyes, nose and general face started burning like I thought my face was gonna burn off. Finally I realized it was cause I didn’t wash my hands and in an attempt to make my face stop burning I kept touching it! So, I washed my hands thoroughly then I washed my face about 3 times. First with warm water then splashed cold water and help a towel over my face and finally relief! That is probably the worst pain I have ever been in, EVER!!! Needless to say, I have learned my lesson.

I didn’t end up eating my soup cause something about eating spicy soup after your face almost melted from a jalapeno wasn’t working for me. Good thing I had chicken salad and egg salad in the fridge that I mixed together and ate for dinner and lunch the next day. Being prepared with things like that and snacks readily available have been a major reason for me sticking to this. Having good health conscious friends help too. In fact Friday night I was planning on making hamburgers but when my friends asked me to come over for some spaghetti squash I was all over it! So last night for dinner I had pesto chicken and spaghetti squash! It was yummy!!! This picture was when it was almost gone cause lets be honest I wasn’t too worried about taking a picture as I was shoveling this into my face. Also this is my friends plate and she added tomatoes I did not.

Another thing I’d like to mention is just because you aren’t in the comforts of your own home doesn’t mean you can’t do this. This morning my mom asked me to come over at 8 to watch the girls so she could take her friend to the airport. Being that it was Saturday I pretty much rolled out of bed, got my coffee and left. Before I did though I grabbed the six ingredients I needed to make my favorite muffins and made them at her house. Not only did I get to stick to my diet but I had a very cute helper.

Success and Failure

So Monday was a mixture of success and failure.

First success was my lunch. I brought both chicken and egg salad in the same container and they got a little mixed. I tried it and it was good so I decided to mix it all together and OMG fantasticness!

Next success was those chicken wings. She was not kidding when she named them the BEST EVER. If you remember I made the marinade in the freezer bag with the chicken and let them sit all night. Yesterday I covered a pan with foil and placed the chicken wings on the pan without getting them too close then I baked them for about 25 mins at 425.

Now for the first failure that I don’t even have a picture of 😦 I tried making eggplant fries to have with my chicken wings. It sounded like a good alternative and the pictures look amazing. But I got distracted and burned them to a crisp and didn’t feel like trying again just yet. Luckily I have some eggplant leftover, so if it stays fresh I will try again. I also baked my pizza bites. I took the dough out of the fridge and shaped it into balls. The dough was super sticky so I used extra tapioca flour to help when molding. I placed 2 slices of pepperoni in each ball, put a little olive oil on top and sprinkled with garlic salt. I baked them at 350 for like 30 mins. I tried eating them today and I have to admit I did not like them and actual threw them away. I was kinda sad but I still did not give into the pizza  at the party.

I did have  a tiny piece of cake and by tiny I mean tiny! I even took pictures to prove it and I didn’t eat the frosting.

It was so good! I had to exhibit some serious self control to not eat more!!

A weekend full of cooking and stuff

So I haven’t posted in a few days cause I have been busy. I woke up Friday feeling awesome and end up doing a lot of random shopping. Saturday was a decent day and I decided to cook a little bit but not everything.

I started with mayo again for like the 5th time. I used the recipe that you can find here: http://thehealthyfoodie.com/2013/07/07/fail-proof-home-made-paleo-mayo-whole30-compliant/

Only difference between mine and hers is that I didn’t use a mason jar or that fancy mixer thing so mine didn’t turn out the same. And I added an extra egg to thicken it up. Its not the kinda mayo I want to spread on stuff but it worked well for egg and chicken salad.

First thing I did was slice some onion with my nifty new slicer.

Its awesome! and then I lined the crock pot with it.

after that I mixed my spices together and rubbed my chicken down.

Then I put it in the crock pot for several hours.

When it was done it completely fell apart! So good. I sauteed some carrots with coconut aminos and then ate! I also boiled some for my grandparents before sauteing it so they would be cooked a little more for them.

It was a little spicy but so good!

While the chicken was cooking I was also boiling a dozen eggs to make egg salad.

When they were done, I peeled them, mashed them up, mixed in bacon, green onions, salt, pepper and some of my homemade mayo.

It makes being hungry when you come home easier and it will be part of my lunch tomorrow.

Mine aren’t as pretty but they are so so good. This will definitely help my sugar cravings!

After I rolled mine into balls I put them back in the fridge then put them back in again after I put the chocolate on top!

Today when I got up I made some chicken salad with some of the leftover chicken. I put the chicken in the chopper to shred it then I added garlic, onions, slicked almond and a little ginger. Mixed it up then added some mayo. This will also be a part of my lunch tomorrow.

Then I thawed out my chicken wings enough to unwrap them from the package. I made a marinade that you can find here: http://everydaypaleo.com/sneak-peak-recipe-from-the-everyday-paleo-family-cookbook/

I made it completely in a freezer bag. Put my chicken wings in there and put them in the fridge. As they thaw they will marinate.

Now  on Tuesday I am going to a birthday party and although it will be a small affair the only food they are having is pizza. So I decided I’m going to make some pizza bites. I made mine and put it in the fridge as I will bake them tomorrow so they will be ready for Tuesday.

Finally I made my breakfast. I bought some sausage patties and fried them up and I made some French Toast Muffins. http://www.whatigather.com/2012/02/paleo-banana-french-toast-muffins.html

Instead of Banana I used Applesauce cause I don’t like bananas at all! Now they are very bland but I tried adding a tad bit of maple syrup and then they were fantastic. Which I mean who eats french toast without any syrup.

Finally I have a confession to make. I cheated today. Part of me feels so bad but my taste buds were happy at least for a minute. My aunt and uncle came to visit from Alabama and I haven’t seen them in a while. So, everyone met at cracker barrel and I did some good but I did end up eating 2 biscuits with apple butter. They were so good though! I’m sure I will be feeling it later so I will make sure to let you know!

Cloudy with a Chance of Meatballs

So if you don’t know anything about Florida then let me give you a weather lesson and debunk any myths. It is hot a lot here, but it isn’t always sunny. In fact, it rains a ton! Especially in the summer time. I mean like everyday at the same time in the summer. Its annoying really. Florida literally has the most bipolar weather system I’ve ever seen! This week for example, Monday: it was nice out low 70sish, Tuesday: Freezing, Wednesday: slightly cold, Thursday: cloudy and rainy and today: it was hot again. Like really make up your damn mind! For people with a slight form of OCD like me and pick out their clothes for the week in advance (I hope i’m not the only one that does this), there can be a real shock when you get outside or it throws me off when I have to pick out a new outfit in the morning.

Anyway on a cloudy and rainy Thursday I made meatballs! Now you, whoever you are, should be proud of me. I was offered free dinner yesterday afternoon after I went to a doctors appointment with my grandfather, who I call Poppie, to check up on his cancer. Now I’m normally all about free dinner especially when its rainy but I said no!

They were already made so I just thawed them out and put them on a cookie sheet in the oven at 425 for 25 mins

That may have been too long cause they were burned a little on the bottom.

While those were cooking I chop up a head of cauliflower into abour 2-3 inch chunks. Then I steamed them until they were  tender.

Then I put them in the food chopper with some ghee and some spices and processed. I had to do mine in several batches because my chopper is tiny.

And now there is mashed cauliflower.

I personally didn’t like the taste or texture really. I can’t describe the taste really but It wasn’t bad just not my thing. And the texture to me was more like rice. It did balance the spice of the meatballs though. I am starting to realize I can’t really hold my heat. Anyway the cauliflower helped tone it down for me. So even though I didn’t really like it, it did do a good job. In all it was yummy and I ate it for lunch today.

Now I forgot to take any pictures of my food today. Sad I know! All I did was cook those hamburger patties that I had prepared with bacon. When I say I cooked I mean my Poppie grilled. I did cheat with a tiny and I really mean tiny bit of mayo (I haven’t been able to create a paleo version with any success yet) cause a plain hamburger just isn’t fantastic. But as I started eating it the flavor of the bacon became seriously present and I stopped using the mayo. It was so good. I even ate a few of the chips I bought today.

They are pretty good and the ingredients aren’t bad.

Only thing about them that is questionable is the evaporated cane sugar but It was buy these or spend way too much time making chips. Which is the better option I know but I decided to eat a little sugar in comparison to breaking my back!

Orange Orange

Yesterday was  a day of Orange veggies and a few episodes of my new favorite TV show Chuck! If you haven’t seen it I suggest you go to Netflix and watch some! I’m totally addicted.

Anyway yesterdays dinner was super simple. Pecan Crusted Chicken from Everyday Paleo (http://everydaypaleo.com/pecan-crusted-chicken/), Baked Sweet Potatoes and Carrots.

The Baked Potatoes were easy. If you’ve never done it all I did was take 3 sweet potatoes put them in a pan and stabbed some holes in them. Then I put them in the oven until they seemed soft enough. First at 350 because that’s what the chicken called for then I bumped it up to 450.

In order to make my chicken I mixed together my mustard and honey.

Then I tossed my chicken in it.

Then I put my crushed pecans on a paper plate and breaded my chicken.

Once it was covered I put it in a pan, sprinkled left over pecans on top then baked.

Lastly the carrots. I sliced them as thin as I could get and threw them in a pan with a teriyaki sauce I made out of the Amazing “Practical Paleo” book. I don’t know how I am about pineapple but I am not a big fan of pulp so I omitted it from the recipe which made it very running but it gave my carrots a nice subtle flavor.

I cooked them in the pan until parts of them were slightly browned. They were not super soft and cooked completely through so there was still some crunch. My grandmother didn’t prefer them that way and would have liked them cooked more so if you like yours cooked more I’d suggest making a double batch of the sauce or boiling a little first.

I am not a big fan of sweet potatoes as is or really sweet so I put a little ghee on mine and then some garlic salt to give them more of a savory taste.

I feel so excited that I have even come this far. I think if my dad saw this plate he would freak out and ask me who I was and what I did with his daughter. We had many a fights about food when I was younger. It makes me proud of myself though that I have decided this for myself and not because I have to or because I want to loose weight. I’m doing this for me to be healthy. Hands down that is it! There will be no big prize at the end, all though a million bucks would be nice, ok maybe i’ll have a donut! My point is that it is so nice to just be doing something for me for all the right reasons!

In conflict to being excited I do think I have carb flu! I’m pushing through it though but really I feel like I could pass out at any given time!! SO freaking Fatigued!!
